Vegan Spicy Mediterranean CousCous

This one is so simple and a great way to use left over veggies.  Season cooked couscous with my Spicy Mediterranean Dry Rub and toss with roasted or grilled vegetables.  Zucchini, tomatoes and onion all work great, but feel free to use what you have! Drizzle with a little olive oil if desired.
